Cyril Lignac reveals the secrets of a good tiramisu
It is one of the favorite desserts of the French: tiramisu. And in order to achieve this to perfection, Cyril Lignac gives his advice. First: make a good coffee, a long one, to come and dip the biscuits in it later. Here is the recipe in its entirety:

Cooling time: 1 night
For 4 people
Ingredients
4 espressos
12 tablespoons of cookies
3 organic eggs
50g + 50g of granulated sugar
360 g of mascarpone
Cocoa powder
Recipe steps
Drain the coffee, soak the spoonfuls of biscuits in the coffee and place them at the bottom of the bowl.
Separate the yolks from the whites.
Mix 50g of sugar with egg yolks in a bowl. Add mascarpone, mix until smooth.
Beat the egg whites with the remaining 50 g of sugar. When they are completely firm, start mixing a part of the previous mixture with a whisk, then add the rest of the egg whites, lightly beaten to keep them light.
Pour the cream halfway into the container, then put a new layer of biscuits soaked in coffee and cover with the rest of the cream. Refrigerate overnight before tasting.
When ready to serve, sprinkle with cocoa.
