• For the whiskey cream

375 g of cream cheese

130 g of honey

75 ml of whiskey

150 ml of double cream (semi-whipped)

• For oatmeal crumble

1 g of baking soda

63 g of self-raising flour

60g of sugar

70 g of rolled oats

63 g of butter

10g of golden syrup (a British specialty also called light molasses)

6 ml of water

• For the raspberry sauce

300 g of raspberries

30 g of sugar

100g of raspberry puree

1 lemon (add juice if desired)

• For decoration

Extra raspberries and mint leaves

Progression

1. Start with the crushed oatmeal by mixing the flour, oatmeal, and sugar in a bowl.

2. In a pot, gently heat the water, golden syrup and butter until they melt and stir in the baking soda.

3. Mix it with the dry mixture, spread it on a baking sheet and bake at 160° until the crumble is golden brown (about 12-15 minutes).

4. While the oat crumble is cooking, prepare the whiskey cream and raspberry sauce.

5. For the whiskey cream, start beating the cottage cheese and honey.

6. When the mixture becomes smooth, add whiskey and mix in the cream.

7. To make the raspberry sauce, just mix the different ingredients together.

8. Once all the elements are ready, you can assemble your Cranachan by layering cream, large portions of raspberries, sauce and crumbled oatmeal, repeat until the bowl is full and garnish with mint wedges. Serve fresh.
